This recipe probably falls more in the spring/summer category than fall food; however, I do make them in the fall too. They are so easy to throw together and are the perfect thing to round out a meal.
For example, tonight I just made the quick hamburger tator tot casserole, grabbed a few fruit cups from the freezer and that was supper!
Frozen Fruit Cups
1 30 oz. Fruit Cocktail
1 30 oz. Apricots
1 20 oz. Crushed Pineapple
1 pkg. frozen peaches
1 pkg. frozen blueberries
1 pkg. frozen mixed berries
1 qt. frozen strawberries
2 cups (16 oz.) 7-up
2 12 oz. frozen Five Alive Juice (or 1 12oz. O.J & 1 12 oz. Lemonade)
Use all juices with fruit. Mix together, adding bananas and 7-Up at the end.
I use my big Tupperware bowl or a big stainless steel bowl.
Makes 25 fruit cups. I use the clear 9 oz. cups and fill with a cup of fruit. Cover with foil and freeze for six hours. I have covered with plastic wrap and foil to keep better; however, anymore they are gone within a few days, so just foil is fine. (Just remember to remove the foil before thawing in the microwave!)
