It has been another cold day in central Iowa! Once again, I am thankful for coveralls, cuddle duds, and a hearty meal in the oven. I love coming inside to the aroma of a meal; plus this time of year the extra heat from the oven is an added bonus.
Three weeks ago we began receiving baby calves.
Now the calf nursery is full of calves and the three a day feedings are in full swing. This a.m. it was below zero in the calf shed. It felt better this p.m. at 20 + degrees! We were thankful for the sun shining in the building this p.m. However, I think it will be cold out there for tonight’s feeding!
Before we could have our supper tonight we had to feed the cattle. Grinding cattle feed is usually a daily occurrence around here. Kevin and Jacob share that chore. A couple pens of cattle require driving the grinder inside the cattle pens; which requires a gate opener (a job I get quite often).

Now for the recipe for a “Hearty Beef” meal.
PEPSI POT ROAST
3-4 lb. pot roast
1 can cream of mushroom soup
1 pkg. dry onion soup mix
1 (12oz.) can of Pepsi
Place roast in a pan that can be covered. Spread the can of soup over the roast. Sprinkle the onion soup over the top. Pour the Pepsi over the top. Cover the pan. Bake at 325 degrees for 4 hours. This makes a gravy that is great served over mashed potatoes.
THOUGHT FOR THE DAY – As the saying goes, “seven days without beef makes one weak!”
