Summer Update and Taco Salad

I am excited for the Iowa State Fair to begin next week; however, that also signals the end of summer. The corn and soybeans have changed so much over the last couple of months.  As of now, everything looks great!  However, we all know that can change with one storm.  Here are some pictures that highlight some of the happenings on the farm and in our family the past couple of months.  We are enjoying lots of summer garden food – especially sweet corn!  Today I am sharing a favorite summer salad – Taco Salad.

Bottom June and July

We call this field “the bottom”.  These pictures were taken in June and July respectively.  The different colors exist because of the different varieties of corn planted in the field.

The corn has really grown the last two months.  It was already tasseled by the 4th of July!

The soybeans are really getting tall too.  The pods are starting to fill out.

We have been enjoying lots of J and E’s Delicious Sweet Corn.  Some of the first plantings have been picked and mowed down.

Snickers loves to ride in the tractor when Kevin is giving bales to the cattle; especially on hot days when she is able to enjoy the air conditioner!

This is one of the little kittens that was in the garage when the school children visited in the May!  Not sure how cute this is in my flowers!! ( One day I wondered why I had a hole in one of my flower pots  – now I have proof!)

Many of these guys became steaks and hamburgers this month.  They were the calves in the calf shed last May.  They are so social!

Emily returned home from Albania!!  Her brother was glad to see her; especially since we are in the sweet corn season!  (My phone memory was full.  This was the last picture it took.  Sorry, Jacob, I did not have another to choose from!)

Today I am shaing one of my family’s favorite summer salad recipes.   My mom has made it for several years.  In fact, on judging day at the Jasper County Fair, the superintendents have a potluck lunch and request Mrs. B.’s Taco Salad.  I think the secret to this recipe is the dressing.


1 head lettuce

1 small can kidney beans, drained

4 medium tomatoes, diced

1 (7 1/2 oz.) pkg. taco flavored chips

1 lb. hamburger, browned

1 lg. onion, chopped

1 (8oz.) pkg. grated cheddar cheese

1 pkg.  taco seasoning

DRESSING:  8 oz. Thousand Island Dressing, 1/3 cup sugar,  Tbsp. taco seasoning, and 1 Tbsp. taco sauce.

Combine everything except chips and dressing.  Right before serving add dressing and crushed chips.
