Orange Slice Cookies

Today I am sharing one of my favorite cookie recipes – Orange Slice Cookies   in honor of National Cookie Month.  This recipe is actually a combination of three recipes!  (Yes Emily, I DID write this one down the same day I made it!)

Believe it or not – this recipe also has to do with what we are harvesting today – corn! One of the main ingredients in the orange candy slices is corn syrup.   Iowa Corn – It’s Everything!

1 cup sugar

1 cup brown sugar

½ cup butter

½ cup solid Crisco shortening

2 eggs

1 tsp. vanilla

1 tsp. milk

2 ½ cups flour

1 tsp. baking powder

1 tsp. soda

¼ tsp. salt

1 cup coconut

1 c. oatmeal

1 generous cup orange slice candies, diced

  1. Preheat oven to 350o Lightly grease or line baking sheet with parchment paper.

  2. In large mixing bowl, combine sugars and shortening. Beat until light and fluffy.  Add eggs, vanilla, and milk; mix until smooth.

  3. Combine 2 cups of the flour, baking powder, baking soda, and salt. (I like to use a piece of wax paper for this step.)

  4. Add to sugar mixture and mix well.

  5. In a medium bowl, toss together remaining flour, orange slices, oatmeal, and coconut. Add to dough.

  6. Form into balls, dip tops in sugar, and flatten. Bake on prepared cookie sheet for about 10 minutes.  Do not over bake.

*************************************************This time of year not all of our meals are cooked at home!  Today we ate at the station – Iowa’s Best Burger Cafe located at the I-80 Kellogg/Sully Exit.  (I like to call it my second kitchen!)

Have a great week!
